Hope everyone had a delicious weekend...we had loads of snow but it was a good one. There really should be one more day between Sunday and Monday. Nothings better than a lazy Sunday morning right? Its kinda the day we make a huge breakfast and just take it slow. One of my favorite Sunday brunches are my Whole Wheat Pancakes and Homemade Vanilla Bean Syrup.
They are whole wheat so eating two.....or three is not so bad right? Ignore the huge pad of melting butter I won't pull a Paula Deen and say everything is better with butter....oh but it is. These are best hot off the griddle but make extra because the heat up well for breakfast the next day.
I make my Wheat Flour fresh in my Blend Tech Blender it grinds things like a champ. But I am sure you could buy whole wheat at your local market.
To start put in the blender:
1 cup Water
1 cup ground whole wheat
1/3 cup powdered milk
Blend
Add:
2 eggs
2 Tbs oil
2 Tbs Honey, Agave, or white sugar
2 Tsp Backing powder
Pinch of salt
Blend again and let sit while you heat up your griddle.
Serve pipping hot and enjoy! Top with your favorite syrup or my Vanilla Bean recipe below.
Syrup:
2 Cups white sugar
1 Cup water
1 Cube butter
3/4 Cup Caro Syrup
Big handful of br. sugar
Scrape out a Fresh Vanilla bean and throw the pod in to simmer as well.
Pinch of salt
Bring to a simmer and melt all sugars...watch carful it will boil over!
Remove pods.
Add 2 Tbs Mapeline flavoring and serve.
Stores in your fridge forever....if it lasts that long. Just heat back up to reserve.
