Black Berry Rustic Pie //

Sorry for the radio silence the last week. I was out of the office purchasing our new Fall/Winter clothing line. Just wait it's a good one. Full of leather and jewel tones....le' sigh.

We all know that I don't have much of a green thumb but I do grow a great black berry bush. Huge juicy fruit I look forward to every Summer. They make the best oatmeal every morning. This week we had a huge bowl so I decided to make a rustic pie....turned out so good I thought I would share.




See I told you she was a beauty. And we get berries for most of the mid summer in to fall.





Mix together the zest of one lemon, sugar and starch. Add berries and coat.




Roll out pie dough and place on a greased cookie sheet. Spread a layer of the cream cheese mixture about 1/2 inch away from the side, top berries and fold dough around to form a circle. Drizzle the rest of the cream cheese on top. Chill for 1hr covered.

Brush the edges with a whipped egg and sprinkle with a coarse raw sugar before baking.





Preheat an oven to 425 with another cookie sheet upside down inside....this will be super hot and act as a hot stone to instantly start cooking the bottom of our pie. Bake for 20-25 minutes till a lovely golden brown. Cool before slicing.

Pie Dough: You can use pre-bought or this recipe.

Cream Cheese:
8 oz package
1 egg yoke
Fresh ground nutmeg

Berries:
2-3 Cups Black Berries
1/3 Cup Sugar
Zest of 1 lemon plus a little juice.
1 TBS Cornstarch
Pinch of salt
